CHEF RODNEY BUTTER'S Raspberry and Sundried Grape Chutney

  • 25g ginger~minced
  • 3 cloves garlic~minced
  • 1 small red onion~small dice
  • 30ml ground coriander seed
  • 1 pc dry red chili
  • 350g fresh(or frozen) raspberries
  • 125g sundried grapes(or dark raisins)
  • 115g brown sugar
  • 200ml RUSH raspberry vinegar
  • 3 pc scallions~small dice
  • To Taste~Sea Salt Black Pepper
  • To Thicken~Cornstarch

1) Sweat ginger, garlic and onions over medium heat in a pot.
2) Add coriander and chili and cook 1-2 minutes
3) Add grapes(raisins) raspberries, brown sugar and RUSH raspberry vinegar. Cover and simmer 25-30 minutes.
4) Season to taste, add scallions and thicken slightly with cornstarch.
5) Can be served hot or cold. Will keep 7-10 days in the refrigerator
