CUMIN CRUSTED CHICKEN SALAD

Salad:
  • 1 1/2 cups diced tomato seedless, skinless
  • 1/2 cup chopped Radicchio
  • 1/3 cup peeled and diced cucumber
  • 1/3 cup diced green pepper
  • 1/4 cup diced purple onion
  • 1 Tbsp. cumin ground
  • 1 Tbsp freshly ground pepper
  • 4 small boneless skinless chicken breasts
  • 4 Tbsp. AH! But A Bing! Cherry Vinegar
  • 3 Tbsp olive oil
  • salt to taste
  • fresh basil for garnish

Line up all the ingredients. Select a frying pan and heat the oil to hot. Season the chicken breasts with the cumin, salt and pepper. Cook the chicken breasts for 2-3 minutes on each side. Do not overcook. Remove and set aside, keep warm. In a bowl, mix together the salad ingredients. Add AH! But A Bing! Cherry Vinegar to the pan and deglaze for a minute. Select 4 warm plates. Thinly slice each of the chicken breasts on the diagonal and arrange on the plates. Pour the hot vinegar mix and pan drippings onto the salad ingredients and mix well. Arrange on the plates next to the chicken breasts. Garnish with fresh basil. This is a great Summer Salad!
